The seven vehicles Rockstar has actually named for GTA 6, what it says about each, and why no official list exists yet.

Vehicles
Yes. Rockstar has named two: a Shitzu Squalo, a pink and blue speedboat docked at Washington Beach that it describes as fishing-ready and carrying a crate of explosives, and a Crest Kayak at Jason's safehouse. Both are Ultimate Edition items. Brian Heder runs a boat yard in the Keys, per his bio. No wider watercraft list has been published.

"Still moving product through his boat yard with his third wife, Lori"
A Vapid Ganado, which Rockstar calls his "well-worn" low-riding pickup. The Ultimate Edition adds a Ganado Retro Build kit of muscle-car mods for it. Rockstar also puts two more vehicles at Jason's safehouse in the same edition, a Dinka Enduro motorcycle and a Crest Kayak. Nothing beyond those three has been tied to him by name.

No. Rockstar has not published a vehicle list, a count, or any performance figures. The only vehicles it has named are the seven attached to the Vintage Vice City Pack and the Ultimate Edition. Every larger list in circulation is a community count from trailer footage, and counts differ because they count different things.
"Welcome to Leonida, the state where anything goes. Seize everything this massive world has to offer with the Grand Theft Auto VI: Ultimate Edition, an exclusive collection of premium vehicles, weapons, apparel, and action around every corner."
Yes. Rockstar has named two mod shops: Rideout Customs, for detailed interiors, rims and donk stylings, and One-Eyed Willie's in Lake Leonida, for off-road work and hand-painted finishes. Both open only with the Ultimate Edition, as does the Retro Build kit for Jason's pickup. Rockstar has not described what customisation the Standard Edition offers.
"Transform vanilla vehicles into magnificent works of art with detailed interiors, exquisite rims, and donk stylings. Only open for business with the Ultimate Edition."
"This mod shop in Lake Leonida specializes in off-road modifications and hand-painted automotive artistry. Only open for business with the Ultimate Edition."
